Sev Khamani also known as Amiri Khaman is a classic Gujarati dish that are traditionally made from lentil cakes that are steamed and crumbled. The Amiri Khaman can also be made from left over dhokla’s. Sev Khamni is basically grated khaman serves with sev (fried gram flour noodles) and pomegranate seeds.
How to Make Sev Khamani?:
- Half Kg Gram dal (Chana Dal)
- 200 Gm fine sev (Nylon Sev)
- 5 green chilli
- 1 teaspoon sesame
- 8 cloves of garlic
- 1 piece of ginger
- 1 handful of raisins
- Half a cup of chopped coconut
- 1 cup of chopped green coriander
- Juice of 1 big lemon
- 1 cup of green chutney
- Hing as per test
Procedure for making Sev Khamni:
Soak the Gram dal (Chana Dal) in water night and cook it in the morning.
Now Take 1 pan and put oil in it until it gets hot. Then put mustard-hing, green chilli, turmeric, sesame and dal now mix it.
Add salt as per test, chilli, sugar and grapes and mix it.
Now add lemon juice, chopped garlic and green coriander then mix it well. Then roast it well.
Now put khamani on 1 plate and spread sev, seeds of pomegranate and green sauce on khamni then serve it.
